A little-known citrus fruit is surging in popularity: yuzu, a tart, fragrant citrus with a light floral sweetness. Its juice, rind and seeds can be used in both sweet and savory dishes. Chefs and home cooks are using yuzu in place of lemon and lime for cocktails, teas and desserts, as well as sprinkling zest into marinades or tahini dressings.
Often, the best place to find fresh yuzu is in Asian markets or Japanese groceries, where you can find the fruit and juice in season from September through February. However, yuzu is starting to grow in the United States and can be found year-round online or in some specialty stores.
In the kitchen, yuzu's juice and peel make it an alternative to lemon or lime in drinks and recipes, especially those that call for sweeteners. It can also be added to salad dressings or drizzled over fish. "Yuzu makes an excellent marinade for grilled meats," says Lysee, who adds that the fruit's flavor can be worked into sweet dishes like desserts and pastries. "It brightens up creme brulee, cheesecake and so on," she says.
Health-wise, yuzu is high in vitamin C, which helps strengthen the immune system and support the production of hemoglobin (the part of blood that transports oxygen). It also has antioxidant properties that help fight aging. The flavonoid hesperidin, which is present in yuzu, has been linked to lower rates of heart disease and helps protect against blood clots.
